That advice is a bit misleading and could potentially make matters worse unless the batteries are isolated too. I guess you has assumed that, but the OP has only had a boat for a month.

 

If you're leaving the boat the priority is to switch off the water pump. Then if you want belt and braces, isolate the water tank.

 

If you isolate the water tank without isolating the batteries or switching off the pump and there's a leak while you're away, the pump will behave exactly like it does when you run out of water - it will activate and won't stop, knackering the batteries or even worse burning itself out, potentially causing a fire.

 

The other thing to do with your water system when leaving the boat in winter is to open a couple of taps to release the pressure in the system so that if it does freeze the expansion has somewhere to go.

The reason your boat looks down at the stern is probably more to do with the water tank at the front being empty. Fill your tank and it will trim up. But while you have all the water drained to the stern, pump it out first.
