250g yellow split peas

2 litres of chicken/turkey/ham, stock- cubes are fine if there isn't any arising from festive fare.

4 rashers streaky bacon or some left-over ham

1 large onion.

 

 

Soak the split peas in cold water overnight, rinse well and drain.

 

Chop the onion and bacon or ham and fry gently until the onions are soft and the bacon fat is running. Add some chopped garlic if you like. Remove from the pan and keep handy

 

Add the split peas to the pan, just cover with cold water, bring to the boil then boil for 10 minutes and skim off the foam as it rises.

 

Drain off the water and rinse the peas again. Put them back in the pan.

 

Add the bacon, onion and stock. Bring to boil then simmer for 45 minutes or till the peas are a mush.

 

Blitz with a stick blender or magi-mix thingy.

 

Season to taste. Adjust the consistency with water if it's a bit porridgy

 

If it's a bit pale and wan a squirt of tomato puree will give it some colour.

 

 

It also works with whole dried green peas, red lentils or most hulled dal. It should work with dried beans, but I've not tried that yet.

 

 

You'll know why I call it concrete soup if you let any of it dry out on the bowl!
