Propellers suck!

Propellers will suck to wherever the pressure is least!

If you have equal pressure either side it is easy to steer down the middle, when you have less water on one side the propeller will want to pull up that side as the water pressure is less.

A tunnel with a towpath has water below the path so the pressure is greater that side, resulting in the stern pulling up the other side

Although I see sound reasoning in the logic it doesnt explain why some boats skew the other way (bow to the wall not the towpath)

 

Has anyone seen the boat infront go one way and then their own boat go the other?

When you are 'skewed' you have to apply rudder to avoid the stern hitting the side, if you over compensate then yes it is easy to go the other way as many inexperienced boaters do!
