Ange Posted June 5, 2009 Report Share Posted June 5, 2009 This is a Jimmy Young recipe - a family favourite for special occasions. Ingredients: 1 pkt (8oz) shortbread biscuits Half cup butter One + half cups icing sugar 2 tablespn icing sugar 2 eggs 1 cup double cream medium tin of crushed pineapple 8" diameter straight sided dish. Method 1. Crush biscuits with rolling pin and spread a layer on the bottom of the dish. 2. Cream the butter, add one and a half cups of icing sugar and eggs. Beat until thick. 3. Spread over biscuits 4. Put another layer of biscuits on top 5. Beat 2 tablespoons of icing sugar and cream together until fairly stiff. 6. Spread over biscuits 7. Drain pineapple. Spread over sugar and cream mixture 8. Leave to set in fridge 9. Put remaining crushed biscuits in top just before serving so that they don't go soft Warning - serve in small portions as it is extremely sweet!
