This was simply a chicken breast with a pocket cut into it with a wedge of stilton stuffed into the pocket. Wrap the chicken back up to seal in the cheese, then sprinkle with mixed herbs and wrap in dry cured smoked bacon. Now we don't have an oven onboard Naughty-Cal so I started these off in the griddle pan on the hob with some foil over them to keep the heat in and cook the chicken through and then transferred them under the grill for a few minutes to crisp up the bacon. I served these with sweet potato and parsnip mash, some home grown carrots and broccoli. Link to comment Share on other sites More sharing options...
