Lemon Layer Hot pudding

This is a really tasty pudding and great straight out of the oven or warmed up.. with lashings of fresh cream over Hmmmm!

 

It is cooked with the cake tin half submerged in water...makes the top sponge like and underneath tasty goo simple ingredients to..

 

2oz butter

Grated rind and juice from 3 lemons

4oz granulated sugar

2 eggs - separated

2oz Self raising flour

9 fluid oz whole milk

 

Place Butter, Sugar and lemon rind in a large bowl - whisk until pale and soft

Add the egg yolks and flour & beat well

STIR in the milk and lemon juice

 

Whisk the egg whites until stiff and then fold into the lemon mixture

 

Pour into a buttered over proof dish and stand in a shallow tin/dish of water ( approx half way up tin in depth)

 

Cook in the oven at 200/gas mark 6 for approx 45 mins

 

The top should be set and spongy to the touch.

 

 

Finally add cream!

ahhh anyway enjoy.. I actually add more lemon rind myself I like the texture of it in the pud
