Fry some mixed veg, I used white and red onion, mushrooms and a red bell pepper and add the chicken. Fry until the veg is softened and the chicken cooked through.When cooked add some brown basmati rice, heat through and then serve on a bed of salad Link to comment Share on other sites More sharing options...
Alanji Posted July 3, 2014 Report Share Posted July 3, 2014 For an authentic Portuguese piri-piri: 4 teaspoons piri-piri crushed chillies (Seasoned Pioneers is excellent) 2-3 crushed garlic cloves 2 teaspoons paprika teaspoon salt 6 tablespoons olive oil Make sauce up in jar and leave a few days (if you can wait) shaking occaisionally Cut small chicken into portions and cover with sauce. Leave in fridge overnight, turning pieces in sauce occasionally. Fry for 25 minutes then oven for 15 minutes at 180 (fan) Serve with chips and salad - scrumptious.
