Enchiladas

We had loads of left over chicken from last nights roast dinner so I knocked up quick and easy enchiladas.

 

Simply fry the chicken, chopped onion, chillis, bell pepper and mushrooms in a pan and add plenty of paprika.

 

In a seperate pan fry an onion and grated garlic and add a carton of passata simmer for ten minutes.

 

When the chicken is cooked roll the mixture in tortilla wraps and place in an oven proof dish. Top with the passata and grated cheese. Bake for thirty minutes.
