Soak a ham shank for an hour, change water a couple of times (unless you like salty). Put peas, shank, chopped carrots in to a pan of water, simmer for a couple of hours. Take shank out, strip meat off bone and put meat back in to soup. Best with hot buttered fresh rolls. Improves after being left to stand for a day. Matt.
