I am using 8mm cable for some of the long cable runs to allow for voltage drop. Do I need to use the same thickness all the way through, even for the short runs through the fuses etc (no more than 800mm) or can I use the 4mm.

The best thing is to post the cable length (there and back) and the current in amps or watts of the appliance, I or several others will give you an instant recommended wire size and volt drop figure.
