I made this recipe up after a long day of cruising. It was raining, the next pub or shop was too far and I didn't have many fresh ingredients at hand. Now I love this recipe and make variations of it all the time. After a while I realised it's "accidentally vegan", too.
Olive oil
1 onion, chopped
garlic, chopped
ginger, finely chopped
3 medium potatoes, diced
1 tin of chickpeas, drained
1 tin of butterbeans or other beans, drained
1 tin of tomatoes
Optional: 2 tablespoons of red lentils (dried)
Optional: half a tin of coconut milk
It's really easy:
Fry the onion, garlic and ginger in a bit of olive oil
Add the potatoes, cook for 5 minutes (add a bit of water if needed)
Add everything else and cook for 15 minutes.
Done!
