I may be a little dense or not thinking it through properly but where would you put the recess if using for a side hatch?  ?

Through the side of the hull, silly.

Perhaps they could be adapted to hinge sideways?

I don’t see the point. If they folded to one side then that area of the wall would have to be kept clear in addition to the area below the hatch. Simpler to just have collapsible steps below the hatch, surely?

Knocked this up with an old ladder and two fancy lockable  hinges.

Excellent and very smart!

Being a cheapskate, I have an Ikea step stool used as an occasional seat or somewhere to put 'things' / or as a hop-up. Great for the lazy or not woodwork-capable.

No dishonour to yours though.

All you need now is a decent engine in there and you’re sorted!  ?

On a more serious note - very nice and also looks good.

I didn’t play long enough on my link. I saw £3.95 and a picture of the stool but when you start selecting options you find that that price was for the floor protectors!

Neat idea that I fancy unashamedly copying. Are those quadrant stays the 'fancy lockable hinges'?
