Pluto
I just came across this video, and there are others, of rafting and floating timber in France. Not exactky canals, but certainly water transport.

Machpoint005
My first reaction to the thread title was "timber by water? Yes, Venice is nice"!
Heartland
I believe the Arisaig Canal, in Scotland moved timber by water in such a fashion, taking it down through a lock into a loch, so to speak.
Dav and Pen
The town of Clamecy on the Nivernais canal was where the timber that was floated down the river was assembled into rafts and then taken to Paris via the rivers Yonne and seine. It was called the floatage and it’s still enacted in a small way every year although the rafts don’t go far. There’s a museum dedicated to it in the town and a nice statue on the town bridge.
