Spicy root veg and lentil stew

A cheap, simple and healthy one-pot meal, and veggie/vegan-friendly.

 

Ingredients (for 4 portions):

 

2 cloves garlic (crushed) (optional)

1 onion (chopped)

1 large carrot (diced)

1 large parsnip (diced)

1 medium sweet potato (diced)

120g red lentils

1 pint vegetable stock

50g tomato puree (optional)

2-3 heaped dessert spoons mild curry powder

 

Instructions:

 

Fry the onions and garlic in a little olive oil for a few minutes while you make up the stock. Add the lentils, stir in the curry powder, and add the stock. Simmer for 10 minutes or so while you peel and dice the veg, then throw them in and simmer for another 20 minutes or so. Serve with crusty bread. (I used to serve it with curry accompaniments but decided it just feels more like a warming winter stew than a curry...)
