Sweet Potato and Chilli Muffins

Add grated sweet potato, grated mature reduced fat cheddar, reduced fat cottage cheese, two eggs, chopped spring onions and chilli and a few spoons of self raising flour to a large bowl. Mix well and add mixed herbs and pepper.

 

Portion into a muffin tray and bake for 40 minutes at 180 degrees.
