Stuffed Marrow

Take a marrow and slice it thickly. Scoop out the innards to create a dish then set aside.

 

In a pan fry chopped onion, mushrooms, bell pepper, chilli, chorizo, garlic, mixed beans and chopped tomatoes. Once cooked through spoon into the marrows then top with grated mature cheddar.

 

Bake for 30 minutes.

 

Served here with sweet potato wedges and salad.

I absolutely love stuffed marrow. Though I know it stuffed with mince and onions and rice I believe.

 

Cut the marrow lengthways, scoop out the seeds, fill it, tie it together agin with string and bake for however was long enough.

 

Lovely grub.

Best marrow recipe:

 

Cut marrow in half, scoop out the insides and set to one side. Take half a pound of bacon and quarter of a pound of mushrooms. Fry the bacon and mushrooms together and put into the scooped out marrow. Eat bacon and mushrooms. Discard marrow.

lol - i was half way through reading this post thinking this thread had much better recipes than the 'surplus courgette' thread

I made this the other day. It came out surprisingly well.
