Naughty Cal
Take a few chicken breast and slice them in half to reduce their thickness. Lay them in an over proof dish and layer a bag of fresh spinach on top of the chicken. Cover with cheese sauce and season well with pepper and grated garlic. Finally top with grated mature cheddar. Bake for 30 minutes at 220 degrees. I served this with Jersey Royal new potatoes and baby kale.

Peter-Bullfinch
Just made this today and it was delicious. I was unsure about the whole bag of spinach so I used only half....but...you were right. The potatoes were just the thing too...no need for peeling either. I used the same pan to boil them in as I had used to make the sauce....tasted better and saved washing up. I really enjoy trying out these boaters recipes.
