Slow cooked lamb casserole

In a large oven proof pan add some diced lamb leg, chopped onion, bell pepper, potato, carrot, turnip, parsnip, tinned tomatoes, rosemary, garlic and vegetable stock.

 

Put in the oven at 130 degrees for as long as you can bear the amazing smell. We left ours for five hours.

 

Serve in a large Yorkshire Pudding.

The longer you leave this the more tender the lamb will become.

Yum! I might put my brisket recipe on here now, coz that was yummy this week.

 

Yes please. I'd love to find a way of cooking brisket that works.

 

Mind you I cooked a whole shoulder of lamb today and that came out lovely

I used to do this on the stove. Similar preparation in similar pot first thing in the morning, then simply stand on top of stove whilst busy boating all day. Good for a quick taster at lunch time, but after tying up for the night, gorgeous. .
