Turkey, leek and bacon pie

As is usual for boxing day we had loads of left over turkey to use up. So today we had a turkey, leek and bacon pie.

 

Simple to make simply fry a leek, chopped bacon and chopped turkey. Add chicken stock, rosemary and lemon juice and then simmer for 15 minutes. Portion into dishes and top with light puff pastry. Bake for 30 minutes at 200 degrees.
