Leek & Potato soup

This is just way too easy to make and quite tasty as well. Even MtB with his limited larder could whip this up :)

 

2 rashers smoked bacon chopped

2 large or 3 medium potatoes cubed

1 - 2 leeks sliced

100g butter

2 Bay Leaves

S&P to taste

1 L veg stock (cheat and use a veggi stock cube or substitute for a chicken cube as I had to)

200ml milk

 

Melt butter in a large pan

Add chopped bacon - cook until it just starts to turn colour

Add potatoes and leeks

stir so everything is coated in the butter

Add stock

Add Bay leaves

Season w/ S&P

cook covered for 10 - 15 min till everything is cooked

remove the bay leaves

pour contents of pan into either juicer or food processor and blitz till smooth

return contents to pan

add milk

stir till well mixed

when hot ladle into bowls

sprinkle with either fresh chopped or dry parsley

I had some left over handmade croutons to garnish with as well

Season to taste with fresh cracked pepper & sea salt

Just had a mug full believe it or not.

 

Much simpler method.

 

Potato's & leaks + 1 onion + veg stock cube & White pepper.

 

Diced

 

simmered (Pressure cooker)

 

Blended

 

Drink. This is one of the nicest & tastiest soups I've ever had and mind numbingly simple.

 

I do like the idea of adding bacon though, and butter & Bayleaf.

My method:

 

2-3 med potatoes

2-4 leaks

1 onion

white pepper

veggie stock cube (5)

 

Roughly cut up all veggies put into large pressure cooker fill 3/4 with water, add a generous helping of white pepper and stock cubes

 

Cover and cook for 20-25 min

 

Blitz till smooth

 

Serve with some lovely crusty bread.

 

Julian wants to try the bacon in it so I will put some in next time, hes to finish off the latest batch first lol lol lol icecream.gif

First time I ever made it today, just couldn't believe how easy it was. Yeah, the smoked bacon does give it a nice flavor as do the bay leaves. I had made a loaf of crusty white bread earlier, it was still slightly warm when we had the soup - Yummy :)

going to give carrot & coriander a try later in the week; I've never made veggie soups before (well it would have been without the bacon), only things like seafood chowder, beef barley, chicken vegetable, corn chowder (this also has bacon in it), hardy soups are more traditional back on the east coast of Canada I guess :)

You have all forgotten to add chilli!

 

My favourite soup at the moment has to be smoked bacon and sweet potato. Oh hang on no it could be butternut squash, lime and chilli ........

 

Too many to choose from. I just love soup :)

I had made a loaf of crusty white bread earlier, it was still slightly warm when we had the soup - Yummy smile.png

Crusty white, especially a genuine French Stick, is good for dipping into soup.

 

Many years ago I discovered, in a local bakery, the perfect loaf to make soup into a meal.

It was wholemeal, oval, not tin, with a medium crust and was much 'heavier / denser' than the 'pap' that Hovis etc. supply.

 

Can anyone suggest the proper name of this bread so that I may persuade my current local bakery to make some?
