Roast neck of lamb with roast veg

This is wonderfully simple and mighty delicious IMO. You need a proper butcher as most supermarkets don't sell cuts of meat like this.

 

 

1 neck of lamb cut into 4 - they should be about 1in thick.

6 fat cloves of garlic - peeled

2 red onions, roughly chopped

2 peppers - (colour is up to you) cut into wide strips

Medium aubergine cut into large dice

4 tomatoes cut in half

Medium sized new potatoes - 8, 9 10? you choose, it's not critical, cut in half (or large bite size)

Three or four good sprigs of fresh rosemary

Olive oil

 

Preheat oven to Gas Mk 6.

 

Place all the veg in a large olive-oiled roasting tin. Drizzle with more oil. Tuck in the rosemary. Roast for 20 mins. Add the neck of lamb - also tucked in to the veg. Roast for a further 40 mins.

 

That's it. Can't remember where I first saw this but it might have been Nigel Slater.
