Naughty Cal Posted April 29, 2014 Report Share Posted April 29, 2014 We had loads of left over chicken from last nights roast dinner so I knocked up quick and easy enchiladas. Simply fry the chicken, chopped onion, chillis, bell pepper and mushrooms in a pan and add plenty of paprika. In a seperate pan fry an onion and grated garlic and add a carton of passata simmer for ten minutes. When the chicken is cooked roll the mixture in tortilla wraps and place in an oven proof dish.
