Slice an aubergine and fry on a medium heat until browned on each side then set aside to cool.

 

In a large pan fry an onion, mushroom, courgette and mince until softening. Add a tin of tomatoes and some smoked paprika and simmer gently.

 

Meanwhile make a simple cheese sauce with butter, flour, milk and mature cheddar.

 

Finally layer the cheese sauce, aubergine and mince mixture in a similar way to making a lasagne. The last layer should be cheese sauce and finally top with grated mature cheddar.

 

Bake in the oven for 20 minutes at 200 degrees.

 

Served here with wedges and salad.

Yes, I realised that :-)

 

Some of the Greek restaurants use cinnamon. Some don't. I quite like it. There's a cheap lamb or rabbit stew that goes into the bread oven that's loaded with cinnamon too. Can't remember the name now......lots of onions, goes all caramelised. Dunk bread in it. Wash down with a bottle of Retzina or Athos, or two....

 

Can you tell I haven't been there for a while? Going all sentimental. Love it! :-)
