Steamed fish and veg in hollandaise sauce

A simple, quick and very tasty meal all cooked on one ring using multi-section steamer, using a store cupboard proprietary hollandaise sauce (or even better of your own making) and fresh veg., eg potatoes, carrots, fennel and seasonal greens, fillet of lemon sole or white fish as available.

 

Sainsbury usually has good selection including Lemon Sole where I live anyway, may be more difficult canalside with so many fish shops closing, but most supermarkets can be relied upon to have some white fish and ready made hollandaise sauce. Cook root veg in steamer section nearest steam, and fish furthest from steam skin side up, and should be ready at roughly the same time 10-15 minutes, but check the fish occasionally during cooking with a knife, when cooked knife and don't seriously overcook it.

 

Flake fish, the skin peels off, toss the fish and veg into the hollandaise sauce straight from the jar. Chilled white wine adds to the experience, French Loire whites such as Vouvray or, if celebrating, Sancerre match the food beautifully, or whatever you like of course so long as it is chilled.

 

Jim Shead's website, and others I think, if searched for "supermarkets" advises canalside or adjacent supermarkets to the canals.

Beware shop bought Hollandaise/Bearnaise, they can be gloopy and tasteless. Sainsburys do there own Bearnaise which isn't too bad, but much, much , much better to do your own......MMMMmmmmm Bearnaise....... :banghead:
