Sweet Potato and Smoked Bacon Soup

Peel and roughly chop three medium sweet potatoes. Bake in the oven for twenty minutes.

 

Whilst the potatoes are roasting chop and fry an onion and glove if garlic in a large saucepan. Once softened add chopped smoked streaky bacon and fry until cooked.

 

Then add a couple of tea spoons of smoked paprika and a pint if vegetable stock and simmer.

 

Finally add the potatoes to the stock and blend with a hand blender.

 

Serve with warm crusty bread and butter.

That sounds like a winner, I would change one thing, HOT smoked paprika. I use that in my butternut squash soup, and its always a winner.

 

I gonna give it a try.

We often add a little chilli to it but as this is for guests as a starter tonight and we dont know how hot they like their food I decided against it.

 

I was a little worried about how it would keep its colour as I have made it in advance but it seems to be holding up just fine.
