Medley of seafood with herbs and garlic

Beauty of this recipe is, it is quick and only needs one large frying pan.

A Saucepan as well if served with boiled rice.

 

Ingredients

550g/19.5oz mixed sea food (such as cod, salmon and prawns) If using prawns use raw as pre cooked tend to go rubbery when re heated.

40g/1.5oz butter

1/2 tbsp chopped garlic

3 tbsp spring onions, finely chopped

120ml/4.5fl oz dry white wine

1 tsp lemon zest

1/2 tsp salt

1 X 400g/14.25 oz can of chopped tomatoes, with the juices

a few drops of Tabasco sauce (optional) or chilli sauce

1 tbsp chopped parsley

1 tbsp chopped chives

1 tbsp chopped dill

a few sprigs of various herbs to garnish

 

Method

1 Wash the fish and cut into 5cm (2in) pieces wash pawns

2 Melt 20g (0.75oz) of butter in a large frying pan. Add garlic and fry until just starting to colour.

3 Add the seafood, spring onions, white wine and lemon zest

4 Cover and simmer for 2 minutes

5 Remove lid and add the tomatoes, Tabasco sauce and herbs

6 Simmer for 2 minutes more

7 turn off the heat and stir in the remaining butter.

8 Serve immediately in warm bowls, garnish with a few sprigs of herbs.

 

Preparation time: less than 30 minutes. Cooking time 10 to 20 minutes.

 

As an addition I serve on a bed of saffron rice.

If you actually cook the rice in with the rest, the Spanish would call it paella marinera.

 

I've not tried that but I should imagine the presentation would not look as appealing. Also the rice may absorb too much of the moisture and make the medley a bit dry.

Forgot to say the recipe serves 2, if you serve it with rice it can be stretched to 4.
