The maggots only eat the guts. They leave the meat alone. Birds hung this long do have a very strong flavour though, too strong for us.

 

A fresh bird hung for a couple of days is more of a strong chicken type taste.

Also the weather is unusually warm this winter, they would normally be hung outside when its frosty at night at least.
