We tend to buy a large chicken, have the breasts with a roast dinner and then use the left over meat in other dishes the next day. It is surprising how much meat you can get from one chicken. For this dish the left over chicken was shredded and left in a BBQ marinade in the fridge overnight over night. So for this dish add a roughly chopped onion, some mushrooms, bell pepper and chilli to a large pan and fry for a few minutes. Add the BBQ chicken and continue to fry until all of the chicken is warmed through and the veg is softening. Serve in multi grain wholewheat tortilla wraps. A simple and quick dish.
