Cajun sweet potato wedges

These are dead easy to make (if you have an oven!!)

 

Cut and knobbly bits off of your sweet potatoes then cut them, skin on, into chunky wedge shapes. Add a little oil and a generous sprinkling of cajun spices to a large mixing bowl. Toss the wedges in the oil then place on a large baking tray. Stick them in the oven for half an hour at 200 degrees after which they should be crispy on the outside and lovely and soft on the inside.

 

Here is a picture of last nights wedges served up with roast chicken breast and a simple side salad. (The rest of the roast chicken is now in a BBQ sauce in the fridge ready for tonights BBQ chicken wraps, love these as well)
