Boxty Irish Potato Pancakes

5 minutes to make

 

Ingredients

• 1 lb. of potatoes, grated

• 3-3/4 cups all-purpose flour

• 1 cup milk, preferably 2% or Homogenized

• 2 Tablespoons warm water

• 1 teaspoon baking soda

• 2 Tablespoons butter

• 1 cup mashed potatoes

• salt and pepper to taste

• Note: I always make these when there are leftover mashed potatoes. By doing so it cuts down on prep time.

 

How to make it

Soak grated potatoes overnight in cold water to remove the starch.

Mix all ingredients together EXCEPT the flour.

Mix All-purpose flour in a little at a time with a wooden spoon or your hands

Add extra milk if it seems too stiff.

Lightly grease an iron skillet or griddle.

Drop the mixture onto the skillet by rounded teaspoons.

Brown the bottom slightly and then flatten the tops a little bit with a spatula.

Depending on what you prefer they can be thick or thinner and crispy.

Cook until golden brown.

Served with butter or sour cream

One of favourite eats are Irish potato cakes, farls??? great with a fry up breakfast on a Sunday morning...

 

Only ever had shop bought though, will give these a go cheers...

The measurements and descriptions of the ingredients sound very American for an Irish recipe!

 

Would that be plain flour, and semi skimmed milk?

 

And what about the majority of us who probably don't have cup measures?

I can't get my head round leftover mash potatoes.

This is an absolute no-no.

my mash gets eaten, and doesn't matter whether its seconds or thirds, (for one or two or more)it goes.

just wondering why mash is needed when you have all that lovely grated taters already, I never use mash or baking soda.

Definitely an american sourced recipe.

I always keep a bit of mash back, and a few veg, saturday morning bubble and squeek with a healthy slice of gammon and two runny fried eggs. Bliss

lEFTOVER MASH THE MORNING AFTER IS AN OCCASIONAL BUT CONSIDERABLE PLEASURE. i FORM IT INTO A HAMBURGER SHAPE, FRY IT UNTIL IT BROWNS A BIT ON BOTH SIDES, AND EAT IT WITH A POACHED EGG AND SOME BAKED BEANS. with a dash of West Indian pepper sauce (Encona for preference) on the side. Gosh, I left the caps lock on. Silly boy.
