Sweet potato & smoked mackerel frittata

This works for our oven at home but the temp isn’t really critical. 

 

Ingredients: 

 

2 medium sweet potatoes, cut into small chunks

1 tbsp. olive oil

8 large eggs

Handful wild garlic or 2 tbsp. chopped chives

4 tbsp. crème fraîche

200 g (7oz), smoked mackerel fillets, skinned and flaked

1 large courgette, peeled into ribbons

 

Method:

 

Preheat oven to 150°C fan.

 

Cook the sweet potatoes with 100ml water in an ovenproof frying pan, covered, over medium heat for 10-15min, until softened. Discard any remaining water and add oil to the pan. Top with the mackerel and courgette ribbons. 

 

Whisk together eggs, chives (or wild garlic), crème fraîche and plenty of seasoning. Pour over the sweet potatoes etc. Cook in the oven for 15-20min, or until just set.

 

Serve in slices with a salad.

Feeds four or two if you’re from Yorkshire. :D

 

It’s nice cold, yes :)

 

Don’t overtook it in the oven, remember that it’ll keep cooking for a few minutes when you take the pan out.

My wife is from Yorkshire and I’ve only lived here for 50 of my 52 years. She reminds me that this doesn’t count. 

 

On that basis your recipe will serve 3!
